Robust Round Steak Parmesan

 

1 1/2 pound round steak

1 egg (beaten)

1/2 cup bread crumbs

1 Tbls Italian seasoning

1/2 cup parmesan cheese

1/3 cup vegetable oil

1 medium onion (chopped)

1 tsp. sugar

1/2 tsp. salt

1/4 tsp. pepper

1 - 6 oz. can tomato paste

2 cups water

1 1/2 pound mozzarella cheese (grated)

 

Preheat oven to 350 degrees. Pound steak and cut into serving pieces. Dip into egg; roll in mixture of bread crumbs, parmesan cheese and Italian seasoning. In large skillet, brown meat in vegetable oil. Remove meat and place in baking dish; sauté onion in skillet drippings. Stir in sugar, salt, pepper, tomato paste and water; boil for 5 minutes. Pour 2/3 of the sauce over steak; cover with mozzarella cheese. Cover with remaining sauce. Cover baking dish with aluminum foil; bake for 1 hour or until meat is tender.
