French Onion Casserole


4 medium onions, sliced -- any kind you like

3 Tbls salted butter
2 Tbls flour
Fresh black pepper to taste
3/4 cup beef bouillon
1/4 cup dry sherry
1 1/2 cups croutons (made by cubing French bread)
2 Tablespoons salted butter
3/4 cup shredded Swiss cheese
3 Tablespoons freshly grated Parmesan cheese

Cook onions in 3 Tbls butter till just tender
Blend in flour and pepper
Add bouillon and sherry
Cook and stir until thickened
Turn into a 1 quart casserole dish that has been buttered lightly
Sauté croutons in 2 Tbls butter
Spoon over onion mixture
Sprinkle with cheeses
Place under broiler until cheese melts
Serve immediately

Note:
Can be assembled early in day -- leave out at room temperature
Bake in 350 degree oven for about 20 minutes and then put under broiler just until cheese gets bubbly....serve immediately.
