Crab

3 oz pkg cream cheese, softened
1 egg
1 1/2 cups ricotta cheese
1/2 cup feta cheese
1 tablespoon Parmesan
3 scallions, chopped fine
1/8 teaspoon nutmeg
10 oz crab meat
2 sticks butter, melted
12 sheets phyllo
1 clove garlic, chopped fine
1 teaspoon lemon juice
salt and pepper to taste
1. Mix cream cheese & egg well. Add other cheeses, onion,
garlic, lemon and nutmeg. Season to taste.
2. Fold in crab and set aside.
3. Coat a 13"x9" pan with some butter. Brush
one sheet phyllo with butter and lay in pan. Continue
with 5 more sheets.
4. Spread with crab mixture. Top with remaining phyllo,
buttering each layer as before. Cover and chill 2 hours.
5. Cut into squares and bake at 350 for 30 minutes.
